Here’s a little rose from Hawkes Bay that’s picked up a 2013 Air New Zealand Wine Awards Pure Elite Gold Medal. According to Cuisine Magazine, there’s  “Lots to love here – attractive faded rose scents, a soft texture and ripe berry-fruit flavours. This is a juicy off-dry summer wine”. They awarded it 5 stars and best buy status.

How is Rose made?

There are essentially three ways of vinifying rose wines. In the first the grapes are pressed directly and the juice is then fermented, as with white wines. This produces what is termed a vin gris, most commonly associated with Pinot Noir. A more common way to make rose is to use an abbreviated red wine vinification, with crushed grapes being macerated before the pale juice is run off to continue it’s fermentation without the skins. This may hapeen after one to three days. The third method is the saignee method where grapes are de-stalked but not crushed. They are vatted for 12 to 24 hours and the lesser the contact the paler the colour. The juice is run off and fermented without skin contact. Rose is tank fermented (rather than cask) and bottled young.

We’ve just tapped this IPA from Left Coast Brewing San Clemente

“Trestles is in the style of an American IPA. 2-row malt and imported light crystal malt create the nice color and clean finish.  We use CTZ and Chinook hops in this beer following it up with a dry hop of Simcoe and Centennial in the fermenter bringing out a citrus aroma.  Trestles IPA is light bodied, clean and pleasantly hoppy.”

Welcome to the Castle MacAdam Blog…

Yes!! We have started a blog!! We figure this is as good a way as any to tell you what’s happening at Castle MacAdam. We’ll let you know about tastings, events, what’s new in store, what’s new on tap etc. So here goes!

Well……it’s not what you’d call a vintage summer. This of course means it is a good time to stay out of the wet with a decent brew at hand. That’s where we come in.  We have just installed a four tap system in partnership with Tuatara Brewery of Paraparaumu. We are delighted to be working with one of New Zealand’s  craft beer pioneers.  We will have the Pilsner, Best Bitter, Aotearoa Pale Ale and American Pale Ale  on through the summer but we’ll mix it up with limited release beers as they become available and perhaps Porter for the cooler months.  But hey – you tell us what you want and we will endeavour to make it happen!

We still have our old system with three taps and we’ll use it for our guest beers.  Still pouring are Sierra Nevada Pale Ale, Heretic Evil Twin Red IPA and Dogfish Head 90 Minute IPA all from the USA.  They are proving very popular of course so don’t delay. Ongoing availability of these beers is patchy at best so don’t miss out!
